One of my favorite fall and winter meals is a big, warm bowl of beef chili! This incredible smoky chipotle beef chili recipe is one of the best I've ever had! The flavors are hearty and warming, with a warming spiciness to the dish! It's made with lots of ground beef, kidney beans, chipotle peppers in adobo sauce, smoked paprika and even a little bit of wine! Enjoy this beef and bean chili with cheddar cheese!

Ingredients for Smoky Beef Chili

Here are the main ingredients you'll need to make this delicious and warming beef and bean chili!

  • Ground Beef: I recommend using 85% lean beef for this recipe. The extra fat is going to add lots of great flavor!
  • Canned, Diced Tomatoes & Tomato Paste
  • Peppers: use sweet red bell peppers for the best results. If you like your chili to be spicy, you can also add sliced jalapenos on top when serving.
  • Chipotle Peppers in Adobo Sauce: these smoky and spicy peppers are a must for my chili recipe! They add tons of flavor and a warming heat. If you don't want your chili to be too spicy, add less of these peppers.
  • Beans: I love to use kidney beans for my chili but feel free to use your favorite variety. Canned beans work best for this recipe.
  • Beef Broth: use broth instead of water to increase the flavor.
  • Red Wine: wine adds great flavor and depth to the recipe, but you can prepare the recipe without it! Replace the wine with more beef broth.
  • Chili Powder & Smoked Paprika: these are the key spices I add to make the chili extra warming, smoky and delicious! You'll also need coriander and cumin .

Smoky Chipotle Flavor

One of my favorite things about this smoky chipotle beef chili is the smoky and warming flavors! For the smoky flavor, I add 2 teaspoons of smoked paprika. And for the chipotle flavor, I add about a quarter cup of canned, diced chipotle peppers in adobo sauce. This rich sauce, along with the spicy chipotle peppers, adds so much incredible flavor to the recipe!

Preparing the Ground Beef

I love having lots and lots of beef in my beef chili recipe and use 2 whole pounds of 85% lean ground beef. I like using ground meats with higher fat content because the extra fat always adds great flavor! Since 2 pounds is quite a bit of meat, I recommend browning the meat in smaller portions.

  1. First, preheat a large frying pan over medium-high heat and add a drizzle of oil.
  2. Brown each batch of ground beef for 5 to 7 minutes, breaking up the meat as it cooks into smaller bits. Make sure you don't have large chunks of beef! As the beef is cooking, season it generously with salt.
  3. Once you have the meat browned, transfer it into a large pot of braising.

How to Make Chipotle Beef Chili

This smoky bean and beef chili was so many great ingredients that make it taste amazing!

  1. Once you have the beef done, saute the onion, peppers and garlic in the same pan.
  2. Next, I add the spices! I like to add them to the onion so they have a chance to toast a bit and release even more aroma!
  3. I also like to deglaze my pan with a red wine. It's not a traditional beef chili recipe ingredient but I think it adds great flavor!
  4. Then I combine the rest of the ingredients in a large pot: the browned beef, the onion and pepper mixture, tomato pasta, diced tomatoes, beef broth and the beans. I used canned kidney beans (drained) for this recipe. Feel free to use your favorite beans here, too!
  5. Bring the chili to a simmer over high heat first, then cover the pan with a tight-fitting lid and reduce the heat to low. Cover the beef chili over low heat for 2 hours, until the broth is reduced and rich.

Cooking Methods For Chili

I'm very old fashioned and I love to slowly cook and braise all of my dishes! For this beef chili recipe, I first bring the chili to a simmer over high heat, then cover it and reduce the heat to low. I cook the chili for about 2 hours over low heat, stirring occasionally.

  • Slow Cooker Instructions: if you want to use a slow cooker for this recipe, prepare the recipe per the instructions, but reduce the beef broth from 3 cups down to 2 cups. Place all the ingredients into the slow cooker and cook on 'high' heat for 7 to 8 hours, until the liquids are reduced.
  • Pressure Cooker Instructions: prepare the recipe per the instructions but reduce the beef broth from 3 cups down to 2 cups. Place all the ingredients into the pressure cooker and if your pressure cooker has the option, select 'Chili/Beans'. Otherwise, cook under high pressure for 25 minutes.

Chili Serving Suggestions

I always enjoy my smoky beef chili with a generous amount of grated cheddar cheese on top! It melts right into the chili and tastes so great! You can also add a sprinkle of cilantro or parsley on top, along with slices of jalapeno pepper for even more heat! Also, try adding a squeeze of fresh lime juice to add a bit of freshness! And don't forget some rustic bread to soak up all the goodness!

Smoky Chipotle Beef Chili Recipe (video)

The best beef chili recipe with chipotle peppers, smoky paprika and beans.

  • 2 lbs ground beef, 85% lean

  • Cooking oil

  • Salt/pepper

  • 1 large onion, diced

  • 1 red bell pepper, diced

  • 6 garlic cloves, finely minced

  • 2 tsp chipotle chili powder

  • 2 tsp EACH: smoked paprika, ground coriander, ground cumin

  • 2 tsp EACH: salt, sugar

  • 1 tsp ground black pepper

  • ½ cup red wine, or beef broth

  • 3 cups beef broth

  • ¼ cup canned tomato paste

  • 14.5 oz can petite diced tomatoes

  • 14.5 oz can kidney beans, drained

  • ¼ cup diced canned chipotle peppers in adobo sauce

  • For serving: cheddar cheese, jalapeno, cilantro, limes, bread

  • Preheat a large frying pan over medium-high heat and add a drizzle of cooking oil. Once the pan is hot, begin frying the ground beef in batches; I recommend splitting the 2 pounds into three portions. Brown each batch for 5 to 7 minutes, breaking up the ground beef with a flat spatula until only small pieces remain. Season the ground beef with salt. Once browned, transfer the beef into a large braising pot.

  • Next, into the same frying pan, add the onion and bell pepper; add more oil if needed. Saute this mixture for 4 to 5 minutes, until the onions are tender. Next, add in the garlic and cook for 30 more seconds. Add the spices next: smoked paprika, ground cumin, ground coriander, and chipotle chili powder. Toss the spices with the onion mixture and cook for 1 minute.

  • Deglaze the pan with the wine (or broth), cooking until the wine is almost completely evaporated, about 1 minute. Add this mixture to the ground beef.

  • Add the remaining chili ingredients into the braising pot: beef broth, tomato paste, diced tomatoes, drained kidney beans, chipotle peppers, salt, sugar and ground black pepper. Stir to combine all the ingredients together.

  • Bring the chili to a simmer over high heat first, then cover the pan with a tight-fitting lid and reduce the heat to low. Cover the beef chili over low heat for 2 hours, until the broth is reduced and rich.

  • For serving, top the chili with grated cheddar cheese, parsley or cilantro and sliced jalapeno peppers. Enjoy with rustic baguette, too.
